Abstract: This report describes a rapid and innovative microwave procedure for protein hydrolysis coupled with high performance anion exchange chromatography and pulsed amperometric detection (HPAEC-PAD) to quantify the amino acid 4-hydroxyproline in meat and meat-based products.
