PubMed ID: 2360357. Abstract: 283 samples of meat and sausages made from pork from the Meat-Works Colombia in the Country of Las Tunas--Republic of Cuba--have been analysed on their contents of nitrite and nitrate. On an average the investigated quantities lie much below the present tolerance limit in Cuba (125 mg/kg nitrite and 500 mg/kg nitrate).
