Title: Synthesis and antioxidant activity of the inulin derivative bearing 1,2,3-triazole and diphenyl phosphate. Author: Wei L, Sui H, Zhang J, Guo Z. Abstract: In this paper, the inulin derivative (3) bearing 1,2,3-triazole and diphenyl phosphate was successfully synthesized by CuAAC Click chemistry. Detailed structural characterization was determined using FTIR spectroscopy, 1H NMR spectroscopy, 13C NMR spectroscopy, and elemental analysis. The antioxidant activities against hydroxyl radicals, superoxide radicals, and DPPH radicals were estimated in vitro respectively. The results showed that the antioxidant activity of the inulin derivative (3) was significantly enhanced compared with inulin. The inulin derivative (3) exhibited stronger radical scavenging abilities, especially against hydroxyl radicals and superoxide radicals. The scavenging values of the inulin derivative (3) were 98.2% and 95.4% at 1.6 mg/mL against hydroxyl radicals and superoxide radicals respectively. Besides, the scavenging value of the inulin derivative (3) increased by about 40% to scavenge DPPH radicals at 1.6 mg/mL than inulin. The results showed that the inulin derivative (3) bearing 1,2,3-triazole and diphenyl phosphate exhibited tremendously enhanced antioxidant activity compared with inulin.
