Abstract: The physical properties of polyunsaturated and saturated fatty acids are compared in relation to melting points and fluidity. The role of polyunsaturated fatty acids on membrane fluidity and membrane bound enzyme activity is discussed. The influence of the environment, particularly temperature, on poikilothermic animals is considered in relation to membrane fatty acid composition and metabolism.
