Abstract: After a short outline of internal iron metabolism, some principles of iron absorption, and especially the difference between heme and non-heme iron absorption and some food interactions, are presented. Particular emphasis is placed on absorption, since in most cases of iron deficiency oral substitution is the rational therapy of choice.
